This delicious soup is rich and hearty, with lots of cauliflower, potatoes and spicy cheddar cheese. Some nutmeg and cayenne pepper help flavor the soup.
Garnish this flavorful soup with a drizzle of extra virgin olive oil or, even better, olive oil infused with chili or garlic. It also goes great with flavored croutons, freshly chopped chives, some diced cooked bacon, or a dollop of sour cream or roasted mashed peppers.
