If you're a fan of cauliflower, you'll love this soup. Instead of pureeing the veggies until they're super smooth, this soup is thick, hearty, yet creamy and packed with flavor.
It's similar to potato soup, but many of the high-carb potatoes are replaced with wholesome cauliflower. It's a veggie-laden bowl that's just plain filling. Although there are some processes to go through, it is easy to do and the results are spectacular.
Serve the soup on its own or garnish with crispy onions, herbs or cheese – cheddar goes particularly well.
