
If you want a thinner, non-creamy soup (or want to avoid dairy), you can simply omit the heavy cream altogether.
You can make this recipe even easier by simply adding in some leftover chicken breasts or rotisserie chicken instead of cooking the chicken fresh.
You can use regular rice or brown rice, but cooking times will vary. White rice only takes 20 to 25 minutes, brown rice about 30 minutes.
Some other fun add-ins:
- After the chicken is cooked, sear the bacon in the pot.
- Add some frozen spinach along with the cream for a bit of a nutritional boost.
- Cook some butternut squash in the soup along with the rice. Simply dice the pumpkin and add it to the pot.
