Chicken Dumpling Soup is a lighter version of the classic chicken dumpling soup that's still creamy, hearty, and filling. The homemade dumplings are super easy to make and have the perfect texture for this soup. We cooked the chicken in the soup, but if you have leftover roast chicken or cooked chicken on hand, you can always use that instead.
Add other veggies like celery or mushrooms if you like. You can even omit the chicken, substitute veggies for it, and use veggie broth for a veggie soup. Serve with a green salad and crusty bread for an easy, warming feast.
