What kind of feta should I use?

Feta is a firm white cheese traditionally made in Greece from sheep's milk or a combination of sheep's and goat's milk. It offers spicy and salty flavors that can be hot or mild depending on the age of the cheese and the length of the brine. The consistency can be creamy or dry and crumbly.

For whipped feta, it's best to buy the feta in a single block that has been dipped in brine. This preserves the freshness and the consistency remains soft and creamy. Pre-crumbled and dry-packaged feta tends to be too dry. While feta is now made all over the world, this recipe uses Greek feta for its bold flavor.

  • 8th ounces full-fat sheep's milk feta Cheese stripped of all brine

  • 2 ounces cream cheese

  • 2 tablespoon Extra virgin olive oil

  • 2 tablespoon toasted pine nuts

  • 1/4 teaspoon black pepper

  2. In the bowl of a food processor fitted with a steel blade, shred the feta and pulse until crumbly, about 10 seconds.

  3. Add the cream cheese and mix until completely smooth and creamy, about 2 minutes. If necessary, scrape the sides of the bowl.

  4. Place the whipped feta in a serving bowl and drizzle with olive oil. Scatter over the toasted pine nuts and ground black pepper and serve immediately.

How to store it

  • Whipped feta can be stored in an airtight container in the refrigerator for up to 5 days. However, it will continue to get thicker. Stir again with a rubber spatula to serve.
  • Whipped feta should not be frozen as it will change texture and become grainy.
