Ingredients:
For the Beef Tapa:
- 500g beef sirloin or tenderloin, thinly sliced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp brown sugar
- 1 tsp calamansi or lemon juice
- Oil for frying
For the Sinangag:
- 4 cups day-old rice, broken apart
- 4-5 cloves garlic, minced
- Salt to taste
- 2 tbsp oil for frying
For the Itlog:
- 2 large eggs
- Salt and pepper to taste
- Oil for frying
Instructions:
- Beef Tapa:
- In a mixing bowl, combine soy sauce, oyster sauce (if using), garlic, salt, pepper, brown sugar, and calamansi juice. Mix well.
- Marinate the beef slices in the mixture for at least 2 hours, preferably overnight.
- Heat oil in a frying pan and fry the beef slices until they're browned and just cooked through.
- Sinangag:
- Heat oil in a frying pan.
- Sauté garlic until it's slightly golden.
- Add the rice and stir-fry. Season with salt. Cook until rice is well-toasted.
- Itlog:
- Heat a small amount of oil in a frying pan.
- Crack the eggs into the pan, season with salt and pepper, and fry until the whites are set but the yolks remain runny, or to your desired doneness.
Serving: Serve the beef tapa, garlic fried rice, and fried egg together on a plate, traditionally with a side of sliced tomatoes or a small vinegar dipping sauce.
