Tapsilog recipe

Tapsilog is a popular Filipino breakfast dish. The name “Tapsilog” is a combination of three words: “Tapa” (cured beef), “Sinangag” (garlic fried rice), and “Itlog” (egg). Here's how you can make this beloved dish at home:

Ingredients:

For the Beef Tapa:

  • 500g beef sirloin or tenderloin, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp brown sugar
  • 1 tsp calamansi or lemon juice
  • Oil for frying

For the Sinangag:

  • 4 cups day-old rice, broken apart
  • 4-5 cloves garlic, minced
  • Salt to taste
  • 2 tbsp oil for frying

For the Itlog:

  • 2 large eggs
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. Beef Tapa:
    1. In a mixing bowl, combine soy sauce, oyster sauce (if using), garlic, salt, pepper, brown sugar, and calamansi juice. Mix well.
    2. Marinate the beef slices in the mixture for at least 2 hours, preferably overnight.
    3. Heat oil in a frying pan and fry the beef slices until they're browned and just cooked through.
  2. Sinangag:
    1. Heat oil in a frying pan.
    2. Sauté garlic until it's slightly golden.
    3. Add the rice and stir-fry. Season with salt. Cook until rice is well-toasted.
  3. Itlog:
    1. Heat a small amount of oil in a frying pan.
    2. Crack the eggs into the pan, season with salt and pepper, and fry until the whites are set but the yolks remain runny, or to your desired doneness.

Serving: Serve the beef tapa, garlic fried rice, and fried egg together on a plate, traditionally with a side of sliced tomatoes or a small vinegar dipping sauce.
