These warm and comforting Swedish Meatballs are absolutely delicious while being completely vegan! To make the meatballs, we used ground beef from Impossible Burger, which is now available in many grocery stores. No one will be able to tell that the dish doesn't use real meat because Impossible resembles and tastes like beef. The sauce is made with coconut milk and is therefore rich and creamy, without dairy products. Serve this recipe to any vegan or carnivore and they will definitely be happy.
Serve the meatballs on a bed of creamy mashed potatoes or with cauliflower rice if you want lower carbs. A little cranberry jam as a side dish is also a must.
